These yummy chocolate and peanut butter treats are now a healthy alternative to the traditional recipe which calls for loads of processed sugar. Enjoy!

Ingredients
  • 1 c. organic creamy peanut butter
  • ¼ c. organic maple syrup
  • ½ t. vanilla extract
  • 1 T coconut flour
  • 1 bag dairy-free chocolate chips
Instructions
  1. In a bowl, combine peanut butter, syrup, and vanilla. Mix well.
  2. Add coconut flour. Mix well. Let sit for 5 minutes for flour to absorb moisture. Mix again.
  3. Using hands, roll into small balls and place onto pan lined with a silicone liner or parchment paper.
  4. Place in freezer for 45-60 minutes to firm up.
  5. While freezing, make a double boiler by putting a smaller pot into a larger pot filled partially with water. The smaller pot should be floating on the water itself.
  6. Pour the chocolate into the smaller pot and bring the water to a boil.
  7. Stir the chocolate as needed until thoroughly melted.
  8. When chocolate is smooth, turn off the burner.
  9. When the peanut butter balls are firm, remove from freezer and quickly begin dipping them.
  10. Using a toothpick, dip the ball into the chocolate and swirl around until all sides are coated but the top.
  11. Using a fork, help scoop it out of the chocolate while still holding it with the toothpick.
  12. Use the fork to scrape off excess chocolate from the bottom of the buckeye and place back on the frozen (lined) pan.
  13. Store in the fridge or freezer.
