nourish: buffalo casserole

A perfectly spicy, super easy alternative to the traditional (and animal-product laden) buffalo dip... turned into a casserole for the whole family to enjoy!

Ingredients
  • rice, cooked as directed on package (enough for 8-10 servings)
  • 1 c. cashews soaked in enough water to cover for 4-5 hours (no need to soak if you have a high-speed blender like a Blendtec)
  • 1 can cannellini beans, drained and rinsed
  • ¼ c hot sauce of choice
  • celery to top
  • green onions to top
  • hot sauce to top
  • *1 can chickpeas if desired
Instructions
  1. While rice is cooking, blend cashews with their soaking water in a high-speed blender until completely smooth.
  2. Add beans and hot sauce and continue blending until smooth. If you need more liquid to get the blender moving, you may add any non-dairy milk or even some lemon juice for an extra kick. Don't add too much liquid. This should end up being the consistency of hummus.
  3. Chop celery and green onions.
  4. Spread rice on the bottom of a casserole dish, pressing down and smoothing the surface.
  5. (*Hand mix chickpeas into the sauce if you want them for added texture.)
  6. Gently spread buffalo mixture over the rice, spreading it all the way to the edges without disrupting the rice beneath.
  7. You can serve as is, since the rice is hot, or you can warm in the oven for 15 minutes on 350.
  8. Top with fresh celery and green onions.
  9. Serve over a bed of greens for extra nutrition!
